Creates a flow.

- `categories`, array of string, required: At least 1 item. Each item: one of `SIGN_UP`, `SIGN_IN`, `APPOINTMENT_BOOKING`, `LEAD_GENERATION`, `CONTACT_US`, `CUSTOMER_SUPPORT`, `SURVEY`, `OTHER`
- `cloneFlowId`, string
- `asVersion`, boolean
- `endpointUri`, string (URL)
